This is a great chicken dish. It is easy enough to make for a weeknight family dinner, but elegant enough to serve company. Pounding and breading the chicken makes it deliciously tender every time.
Ingredients
4 chicken breasts, pounded 1/4 thick
1 cup all purpose flour
1 cup Italian style breadcrumbs (I use Progresso)
1/2 cup Parmesan cheese
___ salt
___ pepper
2 eggs
olive oil (for cooking)
lemon wedges for serving
Instructions
1. Preheat oven to 350 degrees.
2. Set up three bowls in an assembly line. In the first bowl, put the flour. In the second, the eggs. In the third, mix the bread crumbs, Parmesan cheese, salt and pepper. Season chicken breasts with salt and pepper. Dredge chicken in flour mixture, coat in eggs, then dredge in bread crumb mixture.
3. Heat about 1/8" of olive oil in an ovenproof saute pan over medium heat. Pan fry the chicken on the first side until golden brown, about 2 minutes, then turn over. Transfer the pan to the oven to finish cooking, for about 5 minutes or until chicken is done. Serve with lemon wedges.
