Spiced Pumpkin Bread

My mom has been baking this recipe since I was a little girl. I've tried many pumpkin bread recipes over the years, but found none as good as this one.

Makes two 8 x 4 inch loafs

Ingredients

2 cups all purpose flour
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1 tsp ground cloves
1 tsp cinnamon
1 tsp nutmeg
2 cups sugar
3/4 cup butter, softened
2 eggs
1 15 oz can pumpkin

Instructions

1. Preheat oven to 325 degrees and spray two 8 x 4 x 2 1/2" loaf pans with no-stick cooking spray.

2. Combine flour, salt, baking powder, baking soda, and spices in a large bowl. Mix well and set aside.

3. In a mixer fitted with the paddle attachment, beat butter and sugar until just blended. Add eggs one by one, beating well after each addition. Continue beating until light and fluffy, then beat in pumpkin.

5. Add dry ingredients and mix on low speed until incorporated.

6. Spread evenly into pans and bake for about 1 hour and 15 minutes or until knife inserted in center comes out clean.
