This dish should be called "More spinach, please." My kids request this at least once a week, and although it's a bit rich, I'm more than happy to make it for them. How else can I get them to eat all those vitamin-rich greens? Adults will love this too and it pairs beautifully with any simply roasted meat or chicken dish.
Serves 6
Ingredients
1 16 ounce bag frozen spinach, defrosted
2 tablespoons butter
1 small onion, finely chopped (about 1/2 cup)
1 clove garlic, minced
1 1/2 cups half and half
1/2 cup Parmesan cheese, freshly grated
pinch nutmeg
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Directions
1. Melt butter in a large skillet. Add onions and saute over medium-low heat until soft and translucent. Do not brown. Add garlic to onions and continue to cook for one more minute.
2. Add spinach and increase heat to medium. Season with salt and pepper. Let any liquid from spinach evaporate.
3. Add half and half, Parmesan cheese and nutmeg. Cook until cream is reduced and thickened and spinach has a nice, creamy consistency. Check seasoning and serve.
