Grilled Shrimp Scampi

My family loves shrimp so I always keep a few pounds on hand in the freezer. This dish is perfect for those nights when I need something quick, easy and elegant. It's great on its own, as part of a mixed grill, or as an appetizer.

Ingredients

1/4 cup lemon juice
1/4 cup olive oil
1 tablespoon lemon zest
2 cloves garlic, minced
1/4 teaspoon freshly ground black pepper
1/4 teaspoon sugar
3 tablespoons fresh parsley, finely chopped
1 tablespoon fresh thyme, finely chopped (or 1/4 teaspoon dried)
2 pounds extra large shrimp (preferably organic), peeled and de-veined
skewers for grilling

Directions

1. Thread shrimp on skewers (through tail and head). Arrange in a baking dish and refrigerate.

2. Combine lemon juice, olive oil, lemon zest, garlic, pepper, sugar, parsley and thyme in bowl. Pour mixture over shrimp, coat evenly, and let marinate in refrigerator for 20-30 minutes (no longer or shrimp will "cook" in marinade).

3. Preheat grill to medium heat*. Grill shrimp skewers a few minutes on each side, turning only once, until shrimp are cooked through. Baste with marinade while cooking. Do not overcook. Serve with lemon wedges.

*Shrimp are best cooked over medium heat. If grill is too hot, shrimp will get rubbery.
